🔥 What's Smoking/Cooking on your Pit Boss?

Chicken quarters have got to be one of the very best things on a smoker. cheap as hell, and they come out so juicy and flavorful. People don't expect the chicken to ever be that good at a cook out. Smoked or Grilled.

As for my igniter issue from a couple weeks ago, PB sent me an igniter, and i was able to replace it yesterday. Ran the smoke up to max for a few minutes before shutting it back down. Now I am just looking forward to my next cook.

I don't mind the cold, but the smoker has some wild temperature swings. I've tried wrapping it in a welders blanket but never had any luck.
Extra insulation was one of the reasons I went with a 1600 PSE, and it does seem to hold temp well. Still have to heat the dang igniter with a hair dryer when it's below 40 though. Ah, those first world problems! ;)
 
Did a lil butt today and a couple chickens on the rotisserie.

Looks awesome, but I've got a question. Does that extra grate with the small wire size make the meat less likely to stick? If it does, that's a grate (pun intended) idea that I'm going to steal!
Sometimes but then other times maybe I fergot to oil grate. LoL
To me it just easier to pickup and move around. I usually have 1-2 dishwasher loads of sheet pans and racks .
