No Joke! Hopefully they turned out as good as you were expecting.

They turned out pretty good, Swift brand from Costco. Every bit as meaty as the St. Louis I cooked last time, and way easier to trim. I used a water pan this time just to try it out, will probably skip that next time because it really added to the cook time.

They turned out good Hank.
Next time I'm going to go slow and get more smoke. I used a smoke tube but cook was to short.
