🔥 What's Smoking/Cooking on your Pit Boss?

Got a SRF pork belly I cured. Dusted one with garlic and white pepper. The other with garlic and black pepper.

After being severely disappointed with the pork bellies I was finding local. (Mostly fat) I ordered some from Snake River.
I'll let them go one smoke tube. Then I'll pack another and let grill run on smoke mode. Till they get to 140°. Then into a fridge open for a day. I then wrap them in plastic wrap for a week to let smoke mellow.
 
Pinchos are chicken on a stick. It’s a Puerto Rican meat skewer. Made different ways but in this example it’s Adobo seasoned chunked chicken breast on long sticks.

My uncle that served 30 years in the navy made these when I was little except how he did it was cooked a few pieces on little sticks then after it was cooked serve it stuck in a piece of soft Puerto Rican bread.

BTW, I saved the ham bone from my double-smoked ham I smoked for Christmas for the black-eyed peas...so does that count towards the thread title? :unsure:
