🔥 What's Smoking/Cooking on your Pit Boss?

I'll be cooking IN tomorrow. Making some black-eyed peas and instant pot cabbage with sausage plus some cornbread.

That sounds delicious and I'll have to try it sometime. I hear that's the southern tradition for New Years, but I still follow my NE Ohio roots and go with pork and sauerkraut every year. Whatever your traditions are, I hope all you folks had a safe and happy holiday and have a healthy and prosperous year ahead. Cheers!
 
Gratuitous pic of the instant pot cabbage with sausage. It was delicious, but eating hot soups/stews while it's nearly 80°F out could be more pleasant if the weather is cooler.

Made sticky rice mango balls. I got the idea off of YouTube and changed it up a bit. It is Thai coconut milk sticky rice with a slice of mango and wrapped in bacon. I made a glaze out of mango juice and coconut milk by reducing it on the stove till thick.

Actually, they're just the basic charcoal trays that came with the kettle, but I rearranged them and pop riveted them into a single D-shaped larger tray. You can see that shape reflected in how the thighs are arranged. I bought some Chyna knock offs, thinking these were on their last legs, but the originals are still "rockin" since 2017.
 
I've had the ThermoMaven X2 since the Holydays and it has worked great! At least for three or four cooks so far. IIRC, I paid around $70 for mine. It feels solid and I like not needing to thread T/C wires thru the wall, the alerts and no app is needed on mine.
