This is about the only way my dad has ever cooked ribs when we were growing up. He boiled them, then let them steam in a zip bag til the family was over and the grill was hot. he'd just sear them off on the grill and add BBq sauce. They were always great. Being a purest is for the birds.

My uncle always did it that way when I was younger. I was the official mopper. They were delicious as far as I remember...

Probably not much difference in the end product, but it's all about the experience for me. I love the prep work, and sitting by the smoker keeping an eye on the cook while partaking in a few "polite beverages" :)
 
Did some chicken breast tonight. Brined and dusted with a light coat of Tuffy's Big Umami and topped with Kosmo Q Killer Honey Bee. Used Smokin' Pecan for the first time. Had to hock a few things to afford it but the smoke flavor was really good.

Baby backs and spare today. Football time!! First cook on new 850DX. 3-2-1 method. Just got ‘em on.

Using 2 smoke tubes. One with hickory wood chips, the other with hickory pellets from Bear Mnt.
Is that one of the PB expandable tubes? I picked one up a couple of weeks ago. I like the idea of it.

First thing I told my wife this morning was - It's Football Time! I'm not sure she appreciated the gravity of the occasion. We'll have to see how many times she runs the vacuum in front of whichever TV I'm trying to hide from her at.
 
Forgot to take pics but did a trip tip last night small one at 270 took about an hour then seered on the gas grill for a quick burn on each side pulled off the smoker at 130 internal temp for such a small 2lb one that was perfect
Normally I would do the trip tip some corn on the cob seasoned with hunny hog and avocado oil and some pineapple chicken sausage. Last night was a quick one.

No, one is a long tube and the other is shorter. Wood chips already died so I had to torch them again.
 
Oh and my wife is ready for football time to kick off Tennessee/Syracuse. She will come from the back porch and check the score from time to time while I will be in front of the tv most of the day.
Being a born and raised Auburn fan, lately I've been reduced to wearing my malfunctioning lucky Auburn jersey and hating my parents for doing this to me. Before you feel that I'm being too harsh on them - my father turned me into a life long Cleveland Browns fan 60 years ago.
