It's off and looking amazing. My wife is out golfing and has my phone, so no pics yet. I'm posting something as soon as she's back.

OK, full confession is that I don't have a cell phone. I didn't want to post that, as I get weird looks from people when they find out I don't have one. I need my wife's phone to take pics 🤦‍♂️

At first I thought - "That's weird." - Then I thought - "Damn! I wish I didn't have a cell phone..."

It’s not weird. In the late 80’s a few guys I worked with had cell phones and I didn’t have one until a couple decades later. Haha Everytime they got a call from the wife they would pull the phone out and call it the leash. I think they made a lasting impression of what the cell phone actually was. 🤣

I carried a work cell phone for 25 years (a pager before that). When I retired decided to see how long I could do without one. 8 years and counting ...

You’ll probably go to the end with pleasure without cause I only spent about 8 years on the phone (wired phone) as a parts man and consultant and I’ve already went 25 yrs without a phone. In fact I spent so much time on the phone in those years I didn’t put a phone in at home plus I really needed the money for other more important things.

It turned out swell. Looks and tastes like bacon. Very salty though. Not sure what I did wrong?

For the cure, I used:

1.25 Prague powder
5 Tbsp kosher salt
5 Tbsp brown sugar
3 Tbsp maple syrup
5 Tsp black pepper

The belly was ~ 4 lbs.

I've read that soaking on cold water before frying it may help.

I run them fat side up. Rub em and run them low and slow for more smoke time. Cook by IT. I usually cook them to slice rather that shred so I'll run em to around 175. Paper wrap and then a towel for insulation and drop em in a cooler to rest.

I just pulled 2 10 pounders to run tomorrow. I'll use a rub that a local guy makes, carries some heat, and salt pepper and garlic powder. I plan to run them up to shred/chop. I'll pull the around 200-205 and vac pack them and freeze them for later meals. I will take the frozen bag out of the freezer and drop it into boiling water till it gets hot. It comes out like the day it was smoked.

The wife and I are always doing the what to eat tonight thing.Smoked pork in the freezer is too easy of an answer to that question.

Can't improve on that but thought I would post my cook for today. Dry brined with a modified SPG I make (I have a problem with too much pepper). 7-1-2 - salt, pepper and granulated garlic. I added Meat Church Honey Bacon BBQ before smoking. I used Smokin' Pecan pellets in the hopper and some cherry in a smoking tube.
