I've got the Duke's Carolina Golden from the HEB in my fridge. I add ALOT of mustard to it to make it less sweet. I think it's good on chicken. Maybe it's missing vinegar...? So far, it's the best I can get down here. When I worked in Phenix City off and on, they would serve us up chicken with White Sauce that was outstanding!

That one was Duke's. It leans into the sweet flavor although not candy sweet like BBQ sauce. Not bad for bottled. IMHO I like it more mustard/ vinegar than sweet.

Not sure about down your way.

I have worked in Phenix City been bout 40 yrs tho. There was an on black man had a place called Chicken Comers bbq off the beaten path lol.
 
I like those little places, if I ever get back up there, I'll try the Comers. I ate at a hole in the wall like that, and he served great soul food, and they had 12 flavors of kool-aid in dispensers! At the plant, they'd feed us BBQ from Mike & Ed's. Man that was pretty good stuff! I think that's where that chicken sauce came from. I thought I heard that they burnt down, are they still around? I likes the Ezell's too! 😋

This is a pork loin turned ham. I cured it for ~2 weeks, let it dry over night, smoked for ~3-4 hours then sousvide for another 3 hours or so. Texture and flavor is pretty hammy. Next time I wont use any clove as even the tiny sprinkle i put was to much, and i'll go 2.25% or even 2% salt as 2.75 is just a touch to salty for lunch meat.
