🔥 What's Smoking/Cooking on your Pit Boss?

I've smoked/cooked nothing lately on any of my grills except some burgers on the old charcoal unit July 3. As I'm sure most people know, It rained like heck and back all during 4th of July weekend here in Central Texas and I mean deluge/monsoon style rain. But no flood here in my 20 since the whole town is hilly and runoff is quick. We got 8'' in just a 2-3 hours early July4th...my pool runneth over and my yard ran into the pool . Probably 12-13" over the whole 4 day period.. What a mess and we had guests for the weekend and a pile of different meat I was planning to cook, almost all of which is now in the freezer.
My heart hurts tho, for those in Kerrville and out in San Angelo. I lived in San Angelo for10 years and the pictures and video were terrible to look at.

I did cobble together a fold down shelf for the end of my Lexington. Nothing really fancy and I used the cheap hinges along with a piano hinge. It doesn't fold completely flat against the end but the cover still fits so I'm ok with it.

I put a small shelf on my Lexington, too. It folds nicely.

I wanted to use that type fold down hinge but couldn't find them locally and I hate ordering from the internet.
That's an interesting mount for the temp probe you show there on the pellet hopper and is something I might do later on. Tell us about it.

The base unit has a wire kickstand that flips up, and it just happened to slip under the hopper lid.

Honestly I think they are done. Still one hour to go unwrapped but I had a hard time picking them up without them falling apart.

Smoked 2 racks of ribs for July 4th. After prepping them rubbed with some grape seed oil then rubbed them with my wife's home made rub. Used Pit Boss competion blend pellets in hopper and 2 smoke tubes filled with hickory for added smoke and in about 5 hours we ate.

Bacon wrapped pork tenderloin for my anniversary dinner. Pecan and honey rubs…then glazed with a raspberry chipotle sauce.

Yesterday a quickie baby back rib cook, 5 hours, 225-230. 3 hrs, then wrap for another two.

Cooked some HEB burgers that we had seasoned and stuck in the freezer on the griddle in the 850DX this afternoon but I took the BEFORE pic and forgot to take AFTER. I think the constant rain is getting to me a little bit either that or fixing barn roof leaks in between long rain cycles. They turned out really good sizzling in their grease.

Did them at 360*F with flame broiler just cracked open and kept the lid closed as much as possible.
