Tasty too, although the skin was a bit rubbery.
Maybe a rotisserie like @NC GRILLIN made work would help that skin.

You could also try baking powder and salt all over the skin. Of course you could still use other spices but those two will crisp up the skin. That’s we do when we bake wings and skin is nice and crispy.

Now I want to cook a chicken like we do wings with wing sauce all over it at the end. lol
 
But the real surprise was the SPAM
My first smoked spam was also thrown on the smoker as an afterthought. It also turned out really good. You gotta be careful which rub you use since its already pretty salty on its own. A good idea to get the low sodium spam so you have a little wiggle room with rubs.
 
I thought I’d try something different.
