🔥 What's Smoking/Cooking on your Pit Boss?

@Mac_Paint So let me get this straight. You smoked them for 10 n 1/2 hours then refrigerated both of them bad boys and then reheated them to to 161F degrees for the finalization.

At what temp did you bring them to on the long cook?

Sorry for the large imbedded images! Looking at my notes, the small brisket was taken to 159f internal and the large 171f internal then taken off and wrapped after 4 hours. It took that long to get the color of bark I thought was acceptable. Final cook temp was 198f internal for the smaller brisket and 203 for the largest. Total cook time was 10 1/2 hours.
 
Yesterday I cooked some chicken tenders on a stick with peppers and kielbasas. The peppers were partially sautéed. I didn’t put them together my job was to cook them. The griddle and a little vegetable oil over the hot spot gets the job done then they go on the top rack off to the sides. I think I spent under 15 minutes cooking them.

I set the temp to high or 500f however the actual temp was lower due to me leaving the lid open and used Pitt Boss Hickory pellets.
