🔥 What's Smoking/Cooking on your Pit Boss?

Finally got around to doing a brisket on my new pitboss but not over the moon about it. Seems a bit over cooked on the flat side but flavor was not bad and still pulls apart pretty easy.

Prob 12-13 lbs after trim and cooked for 16hrs maybe 14-15 would have been better.

Dont ask about my slicing...I kinda went after it from a couple different sections looking for good pieces lol

Looks good to me. Thanks for the pictures. I've done a few briskets, and I'm always overly critical of the way it turns out, but it always gets ate and everyone says it's good.

Some briskets are just ornery and want to be hard to git along with. Choose the best cuts you can git with some burnt ends. Freeze the rest and make chili later.
 
Cooked a big pork loin from Costco yesterday, using smoker and rub recipes from Hey Grill Hey. The family said it's the best thing I've made so far, and it was pretty darned good if I do say so myself. I cut it in two so nothing was directly over the fire pot, and both halves got to 145 within a few minutes of each other. Also learned that pork loin and pork tenderloin are two different things. This was pork loin and it turned out juicy and good!
