Very frustrated new user

If one side of the smoker runs hotter, when doing a whole brisket, I'd put the thicker part in the hotter end.

The PB probes are not the greatest. Use standalone probes as others have said, to see what temps you have in different parts of your smoker as well as your internal meat temp.

Cook to internal temp, and use you ambient temps control what temp to cook at.

It is a bit of a learning curve.

Lots of good advice here i would like to add to it i always empty my burn pot before every use and don't let the doctor tell you smoking is bad for .
I all depend on how much beer your drink
