Ok so I switched from Competiton blend pellets from Academy to PitBOSS Charcoal pellets. I’m also using a smoke tube with charcoal pellets. I am using a new rub I got from KOSMOS. I don’t work for any of these brands nor am I endorsing them. This is just what I am doing. I will post updates to let you know how it turns out. I am a HUGE FOODIE, and YELPER. So I have eaten at many places with excellent varieties of food. This is just my take on home BBQ. Maybe this can help someone who is just getting started with the PitBOSS KC Combo like me.

Well not to shabby. I can taste a slight charcoal flavor but not what I want. Maybe it’s because the rub I used is pretty good. The Honey Chipotle Rub came out real good. A little sweet a little heat. And the glaze of the KOSMOS original competition BBQ sauce was spot on. I used the 3-2-1 method and the ribs were real tender. I had a good smoke ring cause I used a smoke tube for 3 hours. I must say this cook was about a 7 out of 10. I’m getting use to my pit and dialing it in. Pork butt tomorrow with the KOSMOS Dirty Bird rub. Here is the pic of the final product of my ribs. As you can see good pull back and nice mahogany color
