Cooked a tri tip like I would cook a brisket.
Me and Deb cannot eat a lot of meat, and I love the flavor and texture of briskets. Soooo, followed Meat Church recipe, season with holy cow, 3 hrs at 230 deg to get 165 deg internal, wrap in foil with butter for 2 hrs. to get it to 205 deg.
Smoked the cream cheese block seasoned with dry rub. 2 hrs, it ws a good appetizer.
Note: My pb850 cooks hotter than what it reads, so the recipe says 250 but I use 230 on the gauge. This was my second tri tip, just as good as the first.
