Hi, I just bought the pit boss 3-series blue hammertone analog vertical electric smoker from tractor supply. It say it’ll go as low as 100 or 110 degrees. But it stops producing smoke far far above that. Like the mid 200’s range. And that’s after turning it up for a few minutes and letting the wood chips start to smoke like the Manual says.
How do I make it stay smoking at 100-165 or shoot even 180 lol. I bought it cause I wanted to be able to smoke something or hours and hours. specifically smoked salmon or trout. I want the moist heavy smoke stuff you buy in airtight packages almost jerky but not quite. Can I put some sort of flame cube in there that keeps a light flame or pre light them with a torch? Drill in another vent hole lower for better air flow?
But at that point it’s just an expensive metal container lol.
Should have gotten the big chief but I’m going to give pit boss a chance and hopefully you knowledge lady’s and gentleman know the trick.

Thanks for the help!
