I have many questions about how to smoke using the KC Combo, such as :
How fast does the auger turn, mine turns very slowly
Should the flame broiler be open or closed while smoking

The auger always turns slow. I don't have the KC Combo but when smoking you should close the flame broiler. Use that only when you want to sear something.

I have a KC Combo. The auger turns slow and dispenses pellets as needed to keep the temp you set it at. If you want to sear the meat first you can open the plates and then close them to smoke.

Your controller is different from most of ours as the Platinum series uses a PID controller. Do some research on PID controllers to get a better understanding how they work as you will then learn how it cooks for you. PID controller controls the fan and auger as a Non-PID controller controlls the auger only.
