First off I'd like to thanks Cowboy1955 for the recommendation of the Cutluxe 12" Brisket knife some posts ago. Oh my, this knife is awesome. I swear you could slice a mosquito in half! LOL !! Earlier today I picked up a 16.62 lb choice prime brisket at Costco here in Columbia SC. They're running $5.89 a pound. I expect a ~16 hour cook, Saturday night at bedtime through to Sun night dinner, smoked on my 850 DX. Low and slow and crank up the heat wrapped. Thanks again Cowboy1955.... way to go! Smoke on !

Cowboy1955 pointed me in the right direction for that knife and your right, it’s razor sharp!!! I also ordered a ceramic rod sharpener to keep it that way and it works perfectly!!! Enjoy your new knife!!
