You could make a Demi Glace! Especially if you kept the bones to roast. If you have juniper berries add a couple to the cold water. If know juniper berries sub a 1/2 pint of Jim Beam and a 1/4 pint of Gin! Instead of red wine demi you will have a wonderful sauce to float your back strap slices on when you plate it!Does anyone have a recipe for smoking a deer back strap? Looking for something. Not sure how long and at what temp. I have done it in an oven but never in a smoker. Thanks all.
