What to do with rib ends

Just cut up 3 racks of spare ribs into St. Louis style. I got a bunch of good meat left over that I threw in the freezer. What do you guys make with that stuff?

I'd smoke 'em up! I probably wouldn't sauce them, though.

I usually smoke spare ribs without trimming.

I cook them at the same time as the ribs. They get done sooner so it's a nice snack while waiting

Any smoked scraps always end their lives in my chili.

It depends on the slab... Sometimes I cook them - Debone, season and roll them and stick with a toothpick to give them consistency, or I just debone and cut up for sausage grind.
