Temp is up. Why?

I let the temperature settle in before putting anything on it
When’s the last time you cleaned the temperature sensor?🇺🇸🇺🇸
The temp was settled. I just took another look and now it's at 275. I've never cleaned the sensor...the grill is new and this is the third time I've used it. I don't even know where the sensor is.
 
I'm smoking some beef ribs at 225 degrees. I just glanced at my smoker and saw that the temp was 252.

What's going on?
What model PITBOSS do you have?

Your rain cap on top of your smokers chimney stack ... when you’re ready to get started to do the initial burnoff, spin it up all the way to the top and run it wide open for the best air flow at those higher initial burnoff temperatures.



You can then adjust it up or down some later once it settles to dial in your barrel temperatures, try a 2-3 finger width gap between the top of the stack and the bottom of the rain cap. With your rain cap adjusted properly it’ll will give you the best air flow for a quicker startup times and on your ambient temperature, humidity and pellet choice you may be able to ”set it and forget it.”



It’s NOT a chimney damper like on a stick burner that you need to use to constantly adjust to control the heat in the barrel, the awesome PitBoss controller constantly monitors the digital temperature probe readings and its algorithms runs the auger to regulate the heat in the barrel at a steady temperature and the combustion fan runs constantly to fan the flames and help maintain the fire... so once you get it dialed in you don’t have to babysit it.



Running your smoker with the rain cap all the way down can cause it to take a long time to come to temperature and cause a flameout or it could also cause it to overheat and show you an ERH (overheat) error code.
 
I had the same issue with my PB1000T1 after years of it working just fine. Cleaning the temp sensor didn't work. Because it's running way too hot, you're kinda screwed in terms of trying to adjust the temp. Didn't try the chimney idea above, but I did speak with PB customer service and they recommended I get a new controller. (Edit: I just discovered I had completely closed the cap. No idea why. PB never asked about that.) Unfortunately, I accidentally fried the controller they recommended as I was putting it in. (It didn't fit well and I forgot to unplug the unit after I confirmed it was working. Was. Pop! Anyhow.) I bought one on Amazon that fits properly.

And the aftermarket controller voids your warranty.
If you’d call them they’d replaced it for free and you’d still have a warranty.
