Mmm! Looks like your gonna have that nice red gravy to sop your bread in.
oh yeah!! I smoked a KC strip the other day and it was amazing! Told the wife before I did it that steaks belong on the grill at 400 degrees for 5 minutes on each side not the smoker. She said "just try it and see what happens". I have to admit, she was right.

225 degrees
Pulled at 145 degrees internal temperature
Rubbed them down the night before and took em out of the fridge an hour before placing them on the grill to get close to room temperature
