Publix has pork tenderloins BOGO this week. here's a reader digest version for a "quick" easy and delicious meal.
One tenderloin about 2" diameter.
I always make my own rub. this was a "rib rub" with plenty or brown sugar added.
folded skinny ends back and tied since i knew they' overcook.
thoroughly coated with rub, injected with Tony's roasted garlic/herb injection.
Bear Mountain butcher's blend in hopper with a tube full to try and actually get some smoke flavor.
set on "L" to get smoke them bumped to 250. Series 2 vertical pitboss
Loin in with @inkbird probes for met and ambient monitoring.
Cooked to 125 then misted with red vinegar/apple juice mix.
Took to 130 hen mopped with unmolested Sweet baby Rays honey sauce.
Cooked to 141 then tented to let juices redistribute.
Sliced about 1/2" medallions.
Juicy fast and delicious.
Total cook time about 1.5 hours.
