Pork Butt Location

OK everyone just picked up a 6lbs pork boneless pork but. Going to cook it tomorrow.
As far as placing ony pb850ps2, where is the best spot the left, middle, or far right side
This may seem like a simple question but I am new to this game and don't have a clue

Also in a pan pr no pan
 
225 for 3 hours in foil pan

Spray with apple juice hourly



Turn up to 250

Pour apple juice in pan and cover



9 hours for 7.5 lb pork butt

Internal temperature 200-205 degrees



Let rest for and hour covered then shred

Very interesting, so I have also been told 225 sit it on the grill and let it go till done. Or 225 when hits 165 wrap and put back till 200

Jaybod I’ll tell you something. I’m 66 and my dad taught when I was a young teenager on wood and making sauce. On wood I always wrapped it but with this pitboss I just spray it hourly with Apple juice. I’ll never go back to oak wood or any wood. I’m spoiled now lol
 
The the first few hours you put it in the tray as well or grate and then tray? Do you find covering in the tray softens the bark to much?

In a foil pan as it says. Once a hour spray it with Apple juice then in the middle of the cook pour some apple juice in the pan. I never cover it. Now I will wrap my ribs. Doesn’t soften the bark. Anytime you don’t wrap is when you get the bark smoke ring.

Find out what works for you. Personally I never use a pan but I inject mine with a combo of apple cider vinegar, apple juice, Dr Pepper and some rub. I put mine in the center of the grates. Don’t wrap unless you want softer thinner bark, but it will take a little longer to get through the stall when all the fat is rendering/breaking down. I prefer more bark. Spray with Apple Juice/Apple Cider vinegar/Dr Pepper every hour. I cook until it’s around 205. Bone always comes out clean and it’s always super juicy and when you mix in all that incredible bark, it’s fantastic.
