New to smoking. Only a little grilling experience. Got a Pit Boss Series 5 Copperhead. Smoked some ribs in it (2 baby backs and a single spare) and it took 6 hours 30 minutes. Was thinking it'd be shorter (maybe 4 hours).
I fired it up at 225. Let it go for quite a while. After about 4 hours, if I remember correctly, the meat was maybe 172 or so but I'm not certain. I realized I needed to get the temp to about 203 for the thickest part of the ribs (so I've read), so I increased the temp to 250. Didn't budge much so a while later I increased to 275, then to 300, then I said screw it about 25 minutes before I finished and put it on 400 to blast-finish them off until 203.
Here's the monkey wrench: I did not wrap them because I wanted to try without it first, and I suspect that at around 225, maybe 250, these ribs would've reached the 203 mark or so. Do you think that's why it took a higher temp?
