I think I figured out some of the temp issues not holding between 200-250 issue.
I unplugged both my meat temp probes from
The smoker and my temp ran A LOT better , not perfect but didn’t drop to 199. Had it set at 250 and floated from 235-245, not a exact fix but better.
May just have to stick the meat periodically, I’ll plug the probes Back in and see if the temp nose dives back down to 199!!
