Hello all,

I've been buying pre-cooked octopus and it's not very tender, so I bought a whole raw 4 pounder. I'd like to smoke it and then give it some char.

Anybody have any experience with this, including dry/wet brining? Pre/par-boiling?

Sorry, but no. I have cooked calamari, it must be flash fried or calamari turns to rubber bands.

We dont get much of that in Missouri so cant help you! But what we do get is -40 wind chill and I have been outside unloading and inspecting boats. The smoker is put up for a while in these parts

OK, do you brine them? How?

No brine. A guick and light dusting in House of Autry's medium seafood breader, then into the friet.

Here in Hawaii smoked octopus is a delicacy and very expensive. Try this recipe

Here in Hawaii smoked octopus is a delicacy and expensive. I used this recipe and it turned out excellent
