New to pellets and fairly new to smoking

Happy new year everyone.

From S.E. Pa and Just got my first pellet grill, pitboss pro 850, for Xmas. Put it together and gave a quick test run. Smoked some beer Brats and no prep chicken thighs. I had never cooked chicken thighs in my life (i know but dont judge me)! They all turned out delicious.

I have extremely limited smoking experience on a weber charcoal grill prev. Only made a couple pork butts, brats, and burgers. In the past so looking forward to all the tips I can get!

Any early tips you all want to share before I really get started smoking regularly? Early smoker maintenance ideas? Warnings of what to avoid doing? All advice is welcome.

Ten degrees is a good thing the old controller had 25 degree increments. They still had some of the older controllers in the supply chain up until a few months ago, and I have been waiting until it seemed they had cleared out. Will probably pull the trigger this week. Ten degrees is fine for me.

Oh wow I didn't know that. Glad I got the 10 one than lol. I was hoping for 5 degree increments especially in the 200's but I guess it doesn't maintain temps that specifically alway so what's the difference.
first run was pretty solid. It was 38 degrees here so i wasn't sure how it would work. When I smoked on my weber the flavor was great but man was it a lot of work maintaining the proper temp with the direct coals. I'm looking forward to being able to cut the grass and do some work around the house without chasing my temps so much. Also, I went into it hearing the complaints about the lack of smoke flavor. I was really happy with the level of smoke. Now they were small meats and not a giant butt but we were really happy with the flavor for the first try 😀
 
low and slow is a good moto read read learn what method works best don't be afraid to try something ask question on here we love to help

Welcome to the group. Just installed the updated firmware controller into my 850. It does have the 10 degree temperature increments. All seems to work which indicates I must have connected the wires correctly. Looking forward to my 1st cook with the new controller to see how it performs compared to the original.

My only suggestion is to get an accurate oven thermometer to check your internal temperature. I use the Thermoworks smoke to check both grill temp and meat temp. It's accurate and I trust it more than the 850 probes and display. Good luck.
