Currently have a PB820 and love it for most all smoking/cooking. Only thing is the temp control range when doing snack sticks or sausage doesn't seem to be small enough. Goes from Smoke setting to 200. Now I can leave it on smoke for a bit of time to get the smoke into them, but being that the meat has to come off at 155, it can be hard to keep an eye when the inside is turned up to 200. Just wondering, i haven't done enough research yet on the PB vertical smokers, but do they have a smaller degree of range from smoke to 200? TIA
 
I'd leave it in smoke mode and monitor it or get a WIFI thermometer with a set point to alarm at say 150 deg.
 
I have a series 4 vertical and it does have lower temp options. Don’t remember exactly, but I want to say it starts at 130 or 150.
