Did nice 5lb standing rib roast for Christmas this year in new 850. Came out best I’ve ever made! Glad I bought myself one!

Nice job on that. We did the same type roast in our gas range yesterday. Took an hour and a half. It was pretty good.
But I’ll want to do this in my smoker too. So any info on time and temp for your smoke would be interesting.
 
I seared it first for about 10 minutes then 220 degrees for about 3hrs. Pulled it at 128 degrees. Tented for 20 minutes. Perfection

We did a similar high heat, then lower heat cook on the gas stove. Something like 450 for 15 minutes, then back to 325 fro the rest of cook. I used the built in probe that saved the day with the target temperature, medium rare. I’d use the probe in the Pit Boss for this kind of cut as well.
