I just picked up a PB1100PSC2 and smoked some ribs to perfection day one. I'm really excited to check out some mods and see about getting this thing down to a temp lower than 190 if possible. I come from a chef/charcuterie background but got out of the biz for more steady employment right before the pandemic. Now use my weekends to experiment with smoke and salt.

Welcome! Have my eye on the PB850, but my Lowe's only has a used model. All the Christmas stuff has taken over, so I guess I will have to wait.
