Mine came with a curved cover that includes a sliding sear plate. When I take the curved cover out, it looks like your first picture, IMG_8880. To answer your question, I never cook without the curved cover.

I wasn’t sure if the defuser would fit with the baffle in
It does on my 1600PSE. Check yours on the “Smokes Like a Boss” web site, they have detailed fitment guides.
