First off, happy Independence Day weekend to all you happy Smokers out there!

First time running the Pro Series overnight for an absolute low smoke on a few pork butts so I can can run a few racks of ribs tomorrow! Water tray is full but I know I'll be looking out the window in the week hours!

How did they turn out? Personally, I avoid overnight cooks because sometimes pellets won't fall down the chute and cause a flameout. Normally if doing a long cook I will wake up at 3AM and start.

It turned out great. It ended up being a 12 smoke at 225. Started at 11pm. Made sure the water tray was full and it needed more by 6am. Fantastic bark on the pork butts. No auger problems but I won't lie, I had the window open just to hear the fan running cause ya never know..
