I now have a Pit Boss barrel smoker that has the slotted flame broiler main plate and slider.
I have ordered a smoke stack for the lid and putting knock-out covers over the 5 holes in the lid.
I think this crucible arrangement needs a diffuser over and around the crucible when not flame broiling. Maybe a 2 eye cast-iron stove top grill propped under the slotted flame broiler will tame the hotspots and temp swings.

Will a stack make a difference I have been cooking on a PB700D for 2 plus years and just just love it I recently added the PID controller for the wifi. Does the stack add anything? 🤔

Not sure yet, there has been alot of "talk" on here about varying temps in the smoke chamber. I think most is due to no baffle / diffuser between crucible and flame broiler plate. This one I just got looks like it gets red hot when not actually grilling.
As for a stack, I like to adjust the damper closed until I see smoke escaping from around the lid a little bit.

SUPER BOWL Ribs
My Bud in Delaware has fired up the PB700 I gave him. He is doing his first smoked ribs today. I fired up mine so we could both work through this 1st Smoke.
Mark started his ribs at 10am.

Hi Tim, We like the performance with the holes plugged and the stack closed down to about 1/4" between top of the stack pipe and bottom of chinamens cap.

My PBV5CS Water pan went empty, check out the temp swings before and after I refilled the pan. Having that "ballast" sure makes a difference. I have used a piece of 3/8 SS plate in other smokers to "store" heat.
