That’s a fact. My strategy now is that the brisket gets done many hours ahead of mealtime. It sits towel wrapped in a cooler in between.If it's not on the table at dinner time, you probably failed at the presentation aspect.
I use my vertical set at 165 and it rests nicely in there. I've rested it there for over 9 hours and it was a fantastic brisket. Before I got the vertical I used my oven in the house set at its lowest setting 170 and that worked as well.That’s a fact. My strategy now is that the brisket gets done many hours ahead of mealtime. I concur, our Ace hardware has very expensive Treager pellets, our Sam's Club has a competition blend which h is inexpensive and I use it alot. On here I heard about Bear Creek, they had a BOGO deal so I gave it a try and liked it. My 4 bags had very little dust considering the torture of home delivered pellets. Maybe the manufacturer should put fragile on the order! LOLCongrats on the brisket! My last one sat wrapped in a cooler for four hours before hitting the table and it was the best I've ever had.
After trying lots of different kinds of pellets I now only use competition for everything. It's just what the wife and I like.
