Controlling temp problems

For some reason I can’t seem to control the temp very well, I have the newer 1100 model, I set the temp at 200 and check the temp 30 minutes later and it’s at 250 and climbing. I’m certain it’s set at 200, so weird. Thoughts?

I had problems also with the temperature. Try put it on the smoke setting P4 and let the temp settle in. Then dial in at 200.
