Competition style chicken thighs

Saw a video on YouTube. Trying chicken thighs with KOSMOS Dirty bird rub. Smoking on my KC combo at 275. Glazing with KOSMOS original BBQ sauce.

Wow what a great taste. The chicken stayed moist and had a slight bite to it. Great chili powder and bbq taste. Had a slight smoke flavor to it. I did not use my smoke tube. And of course I glazed the thighs with a great sauce. The skin was a little chewy and could not get the bite through I was looking for. But I think it’s a technique thing that I need to work on. The rub sort of set on the thighs similar to the way a bark on a brisket. Maybe I need to let it set more to get the bite through. I smoked it for 1 hr and 30 min At 275 with tabs of butter surrounding the outside of the chicken. Then I wrapped the top and cooked for an additional 1 hr and 30 min to an internal temp of 200. Then I glazed it for about 40 min. Next time I’ll let the skin set a little longer or do it without the skin. But it was my first time and the taste and moisture was really good. I will definitely don this again.
 
Are the Kosmos rubs good? I have seen a lot of advertisements but haven't spoken to anyone that has actually used them. I am always on the look out for a good chicken rub.

Absolutely. I have used all of them and are very pleased with each of them. It pairs great with their ORIGINAL BBQ Sauce. I highly recommend all the rubs. Honey Chipotle killer bee with chicken or ribs is a good combo. And Cow cover and Dirty burn go with anything
 
I can only find Kosmos locally at Ace and it is pretty expensive. All they have are the varieties that are spicy, which is find by me but my wife and youngest daughter don't like hot stuff so I have stayed away from trying it. Will check back again and see if they have Dirty Bird and check it out if I can find it.
