Hey everyone,

Anyone have and solid sauce and slaw recipes they want to share with the group? I smoked the best pork butt I ever made this past weekend only to find that I didn't have a single sauce that was delicious enough for my smoked butt baby. I really love the Carolina style vinegar based sauces than a former family member used to make. My girl loves the mustard based ones so I'm open to anything you all are proud of.

I know sauce is a tough recipe to pry from bbq folks but hopefully a few of you are generous lol.....ohhh and cinnamon! I really like cinnamon in my sauces

I love the vinegar based sauces myself, nothing ever comes out the same cause I add to taste as I make it but here's how it starts.

1 cup kc master piece
1.5 cups apple cider vinegar
1.5 cups white vinegar
1 TBL spoon crushed garlic
1 TBL spoon garlic powder
1 TBL spoon onion powder
1 TBL spoon Cayenne Pepper powder
1 or 2 TBL spoons crushed red pepper flakes

Bring to a boil and reduce till your wife yells about her eyes burning from the vinegar . FYI we tend to like it spicy. add more or less of any ingredients to your taste , I have also added garlic or red wine vinegar in different amounts.

almost forgot Tabasco is in there too , its in just about everything I make lol

Taste this and build off of it.
Carolina Vinegar Sauce has three main ingredients, Vinegar, Sugar and red pepper flakes. From there the sky is the limit, but old Carolina Folks kept it simple and... affordable! :<)

Tim that sounds like a pretty solid recipe. I appreciate you sharing that. I will give this a try next time around. Hahah I can imagine the houshold with tears running down their face....are they crying because their eyes are melting or because they know how delicious dinner will be 😭?

In a rush when i got home from work this morning I made the following. I just woke up to try it and it's really pretty good so I thought I'd share (not that it's anything ground breaking lol).
1cup apple cider vinegar
1cup apple juice
1 cup water
1 table spoon fresh cracked mixed pepper
3 teaspoons of red pepper flakes
I added sea salt but can't remember how much( I was getting sleepy by then)
About 2 teaspoons of ground cinnamon
1/2 cup brown sugar packed
1/2 cup ketchup

After I woke up and it rested a bit it was really tasty but I felt it was missing something so I started to add clover honey until I got it where I wanted it.

On a side note, i found the rubs I used for the pulled pork to be absolutely amazing. I layered the Treager coffee and black pepper rub with the Meat church holy gospel rub. 2 heavy layers of both. Although I'm still relatively new to smoking, I really recommend trying them together

Thanks for those suggestions. I'm gonna have to check them out! Any of them you would call the "best one"?

I actually get a gallon of Whitehouse Applecider Vinegar, over medium heat stir in at least 4 cups turbinado sugar and 3 o4 hand fills of red pepper flakes. Once this boils I add a handful or two of the rub I use. Simmer until the wife thing. I strain half and bottle half unfiltered. Use sparingly, it's about the pork!

Haha you all use your wives like canaries in a mine shaft 😂. Thanks for this take on your sauce. Other than the vinegar and crushed red pepper at the base, these give lots of creative wiggle room to make them your own. I'm stoked to make sauces now lol. BBQ and smoking may actually be more addicting than tattoos

I use the bbq sauce to replace the suger and add the other flavors, i have added more for sauce and this for a mop type or to top after its pulled

That’s a good one I been using for years on pulled pork. I usually have to triple it for large crowds. I also use a mandolin to slice the onions, cabbage and peppers.
