Bacon wrapped cabbage

I'm making a Bacon wrapped cabbage today to go with 3 racks of St. Louis Ribs . I'm trying a different recipe than the last time i tried it.I hollowed out the core, and stuffed it with butter,onion, garlic, and some Sucklebusters Tailgaters party rub. Then wrapped in bacon. It's running at 250 with hickory. I figure about 5 hours til tender, I'll update as the cook goes on.

We'll see how it turns out. It felt tender at about 4.5 hours. It's resting in my vertical with the ribs at 160 until my brother gets here.
So not everything turns out well..........the Ribs were fantastic as always but the cabbage was actually disappointing. With all of the flavor I packed into the core and the bacon wrap, I thought it would have alot of flavor. It was not the case. It was actually very bland. Very disappointing.

It does look tasty
 
I think you need some acid and salt to the cabbage. Maybe brine it first . Mayb do a variation on stuff peppers. But you need some acid in the center. Tomato sauce maybe.
I thought about adding a little balsamic vinegar, but didn't. I think you're on to something with adding acid.

I’ve had good results with cabbage on the Blackstone but will keep a PB try in mind. Did a version of haluski yesterday left in pic.h

My grandmothers made that a lot with us being Polish. The wife is interested in making some. I haven't had any Haluski in almost 50 years, forgot all about it.

Cabbage onions with herbs and spices on the griddle for a while. Once it cooks down and gets softer we mixed some Spoetzl in with it. It was good.
