Won’t stay at 225

First cook on my new 700FB and trying to smoke a pork butt at 225. The smoker holds at 250 when set at 225. When I drop the dial to 200 the smoker drops down to 200/210. Temperatures are consistent on both Pit Boss gauges and the oven gauge I Purchased separately and placed inside the smoker.
 
UPDATE! The smoker is set at 200 and is holding at 215.
So if it’s set at 225 it holds at 250
at 200 it holds at 215
 
I would be totally happy with those fluctuations but mine is way too far off!

Set at 225 it went to 315!

That can’t be right. Thank you very much for your help!

I called and only option was a call back that never happened. Maybe tomorrow they will call me.
I’m still happy!
The huge fluctuations stopped but it did still range from 220-260 the whole cook I had set at 225.
The pork butt came out great using Pit Boss competition pellets, sweet rib rub, followed by chophouse steak rub. I also did an apple juice injection the night before. I foiled it after 4 hours around 150* with a apple juice barbecue sauce mixture.

Best bet is to call early in the day. If you don't get a call back keep calling they will eventually call back but they are short staffed due to covid.

My 800 was pretty much the same way the first couple cooks I had on it. Huge temperature swings but by the fifth smoke it has settled down to a moderate ten degree swing either way and I can live with that. As for the temperature setting .. I found that if I set the dial one stop below my preferred temperature setting it actually holds the temperature close to what I was looking for.
 
I have the lexington -cheaper version

My temps if set at 300 I can hold at 260
Set at 250 down to 215 220

The temp on lid is accurate to my wireless temp gauge-the controller is inaccurate

I work around the temps by just adjusting the controller and going form there

Overall still ok with my first foray into pellet smoking-If I stay with it eventually will move up quality
 
there is something wrong with your RTD probe or your controller is not functioning correctly. 225 should not even get you over 300 so I suggest you get a hold of Pit Boss.

Like Mike said early morning is the best time to get a hold of them.
