What to cook?

Hello folks,
I am a newby to pellet grilling. I have a Lexington, so not a great deal of cooking space. I've got family coming over next month, and I have to decide what to cook. There will be 8 adults. In the past, at these family get togethers, I've cooked hamburgers or chicken breasts on my gas grill. But now, I want to do something else and I'm thinking maybe I should do baby back ribs. I'm not sure how many racks for 8 people, or how many will fit on the grill. I'm sort of thinking 1/2 rack per person, so 4 racks in total. But, will that many fit on a Lexington? Maybe, but it might be crowded. Plus, I've never cooked ribs on the grill. I've done turkey breasts, and chicken leg quarters, so I've got at least a little experience. I've got a month to practice before the crew comes over.

What would you cook if you were having a dinner party for 8 people?

1/2 rack per person is about right for when I cook for my family. Yes, four racks fit on the Lexington.

I agree, a pork butt is just about as bulletproof as it gets, especially if you've never experienced cooking ribs on the Lexington.

Pork butt shoulder roast and make pulled pork....

My reasoning is, ribs can be finickey from one slab to another. Plus, loading up the grates with ribs seems to exasterbate this. At leaat thats been my experience with ribs....
I agree. As stated above, a butt is very forgiving which makes it perfect for your first cook for a larger crowd. Its really easy and can feed alot. Welcome from NH 🍺 🍻
