Hey all. My wife and I were having our parents over for our 1 year anniversary on the 24th, and the plan was to have pulled pork. I planned on doing a low and slow over night cook Saturday night into Sunday, and pull it for lunch. The issue is that its supposed to rain and or storm now, so I am going to cook the pork tonight into tomorrow instead. What is the best way to go about keeping this thing as good as possible til Sunday?

1 -Leave it in the frig intact and wrapped until Sunday morning and reheat it in the oven, then pull it in time for lunch.
2 -Take it off the smoker, rest it, pull the pork in the pan and cover it in the frig. then reheat it pre-pulled in the oven
3 - #2 but just reheat it in the microwave
4 - Leave it in the frig intact and reheat it in the slow cooker Sunday morning

Alternately, I could smoke it for several hours, and when its time to 'wrap it' around 165, move it into the slow cooker or oven and just finish it inside. I would still need to preserve it though, since i would still have to smoke it friday.

These are just off the top of my head. What is the best way to do this or what have you had success with for reheating a full butt's worth? This is a 8-9# butt. Im not willing to do an over night smoke if there's to high of rain chance, because I pull the smoker away from the house and its exposed, and a pellet smoker. I haven't got a shelter for it unless I rigged up a tarp, which seems like a lot of trouble and if there's storms, a possible disaster in waiting.

I picked "1 -Leave it in the frig intact and wrapped until Sunday morning and reheat it in the oven, then pull it in time for lunch."

Cooked it for about 14 hours from thursday into friday, then it went into the frig til sunday morning. my wrapping phase was to place it in a foil pan and cover tightly with foul.

I reheated it at 200 in the oven for about 4 hours or so until the internal reached 160 again. This turned out to be pretty much perfect, very little difference between 'fresh' and reheated. the meat was still extremely tender and juicy.
