I don't. I do put a pan with water on the grates while cooking. Trying to keep turkey from getting too dry. My wife makes gravy from giblets and chicken stock.

Yes - If you have a vertical smoker it's required to balance out the heat.
I didn't put water in the foil pan but I did have a stick of Irish butter in the bird that melted down along with a apple vinegar pineapple spritz every 20-30 min. Then used the baster when all that ran into the pan to re basted the bird as needed. Last year I had a turkey on a non smoker grill and in a big turkey pan with a rack and filled it with water etc. The bottom of the bird just got boiled and was kind of gross.
