Two Newb Questions

Wow, I thought those slots were there to allow smoke to pass through. Totally missed the fact that they were used for searing. That explains it! Next time, I'll try doing the ribs with those closed. Thanks again!
Yeah, I did not even consider that since neither of my Pit Boss grills have a sliding seat plate. If it is open then your meat is going to char. I think most people here do not even use that option unless they are cooking a steak.
 
Keep that thing closed when your cooking on your Pit Boss, it's only a searing feature.
It's gonna make a big difference!
and try foiling the broiler plate to help with clean up.
