First cook on my Pro Series 1100. Doing a brisket. I have a ThermoPro probe in the grill also. Grill set at 225. Actual temp goes from 190-250 as does the ThermoPro. The ThermoPro was within a couple of inches of the Pit Boss probe. When it dropped to 190 smoke would start rolling out. Then the temp would start to rise the smoke stopped. Continuous cycle. Moved the ThermoPro to the middle of the grill next to the brisket and now it goes from 205-270. Have a water pan at the right side of the grill also. Another thing. Instant read thermometer reads 148 on brisket, Pit Boss is reading 172.
