Smoked Turkey Breast

Almost 60 here today in Maryland. Though it would be a good day to install the replacement controller and temp probe in my PBV4PS2. Took all of ten minutes to install them. Now time for a test run. Spatchcocked a turkey breast. 230 until IT hit 145 then bumped it to 350 to crisp up the skin until IT of 165. New controller and temp probe worked flawlessly.
