Ribs

I'll tag along on this thread as I'm having a terrible time trying to get the internal temp to 190+ F. Got it up to 168 F right before I added the sauce for the 1 hour open foil cook and now I cannot get it above 154 F. Turned the heat up from 275 F to 300 F to see if that might help. Suggestions?
 
Never heard of that problem I would call PB
Why would I call PB about not being able to get the internal meat temp correct? The smoker is doing great at maintaining the 275F for the entire smoke, even the temp probe feature is working acturately; within 3 degrees of my handheld. I am just doing something wrong.
 
Things worked out. Gotten up to 195F and let them rest and they turned out amazing. Mrs only complaints were that she likes fall off the bone ribs and that the end pieces were a little over cooked . So I will work on that and different types of poultry to get to the turkey and ham for holidays.

I had the same issue, could not get the ribs to get to desired temp. Increased temp from 225 to 250 and then to 300. The ribs never got past 190 degrees using the 3:2:1 method. Never had an issue such as this.
