I'd pull wrap in paper till I's ready to eat!

I run mine till 200-205....

I also take them in the house and cut them into individual ribs right away.....

I smoke mine (spare and back), dry rub only, misting every 45 minutes and do not wrap and pull at 180°F to 185°F.
