Never worry about the time. I always go off internal temperature
225 degrees
After and hour or so I wrap mine and pour Dr Pepper in with them
Last 45 minutes I unwrap and mob the sauce to em

i usually run @ 250 ,baby back only take about 3 to 3.5 hours. smoke for 2 hours check with a toothpick for softness should be resistance foil and back on for 45 to 1 hour

So O see one rack is over the fire pot and the other two are to the left and right do you move them durong the cook does the one over fire pit burn or cook faster than the others, if you are only doing one rack do you still put it over fire pot. Thanks.

I do switch them around, so finish at or near the same time.
