I like rib steaks to the med side of medium rare.

Pellets were a mix of Trg. Gourmet and PB mesquite.

Slow smoke to 120 internal. Ok, 119... We were hungry 😃

Opened up the flame and burned some fat.

Neighbors were prolly jealous as the smell was really tasty.
 
And the '16 Seghesio Sonoma County zin was fabulous with the rib steak.
