Recommended Temps

I am a little confused by the owner's manual and the suggested temps and times section of the manual. As you can see in the beef section it shows temps 150 and below for Rare/Med/Wel Done.
My confusion is that the Pit Boss model I have PB 850 Pro Series II won't go below 180.

For most all types of meat the temps in the guide are 180 or less.
And on top of that the HEAT columns are all just the same Medium or High, no actual temp settings.
What am I missing?

Thats internal temp of the meat. You cook at 250 more or less depending on the meat.. Dont look at that just follow a recipe on you tube. It might take a long time for the internal temp to get to those temps. Ribs usually can take 3 to 6 hours depending on how you set your temp. Smoker temp and internal meat temp is the key. Time is just a base figure.
 
from 150 to 250 your smoking, from 250 to 350 your BBQing, from 350 to 650 your grilling. Try to keep it around 225 to 250 for smoking and go by the internal temp of the meat to tell you when its done You tube has lots of instructions and so does this sight Lots of good smokers on here!:)
 
Pretty sure I read somewhere in the manual that this model will not go below 180F. I will have to double check that. but based on what you are telling me, can you tell me what is the usefulness of the temp stuff provided in the manual?
 
The "cooking guidelines" in the manual are a hot mess and are very confusing because they organized each meat type differently, and some sections are incomplete. For the beef section that you referenced, the HEAT column refers to this table and what temperature you should set your controller at:

But then you look at some of the other sections and it doesn't give you guidance as to what temp you should set your grill at, just a rough time:

Long story short, get your recipes from another source and don't bother with the Pit Boss directions.

I think you might still be confusing your grill temp with the internal temp of the meat.
